To cut a long story short; Botched up a chain change and had to re-connect using two KMC Quick-links. Would anyone have any concerns about doing this? Rest of chain is fine.

No problem at all, might even help you if you can's get one apart when required, you have another to try.

Could just remove all outer plates and replace with quick-links

Was thinking just that. Quicklinks won't last as long as proper links but no reason why a chain made out of 100+ quicklinks wouldn't last 3000 miles.

And no need to carry spare quick-links!
