Why do Specialised put me on the wide end of 143 mm Romin and San Marco put me on 131 mm narrow Aspide? Which one is correct? Spech dont even make a Romin narrower than 143 now. San Marco dont measure sit bone width but must be confident with their method.

Those dimensions are saddle widths not bone measurements. The shape of the saddle dictates what width of a particular model will suit a particular dimension of sit bones best.
I use 2 different saddles on my 2 bikes. One is a Specialised Romin Evo Expert Gel in the 155mm size (I tried the 143mm - it was too narrow). I also use an Adamo ISM Attack saddle which has a width of 110mm if I'm not mistaken. They are both a good fit, however they're completely different shapes so differences in the max widths of the saddles is irrelevant.
