What the title says really.

I have Shimano 10 speed on these wheels - can I slide an 11 on its place?

I actually want to run them on Campag 11 speed but I understand a Shimano 11 cassette runs perfectly with Campag 11

If you have a 1.85mm spacer behind your currently installed 10-speed cassette, then yes. Otherwise no. Be careful; if your cassette is anything above Tiagra, there will also be a thin spacing washer behind the cassette; this isn't the spacer you're looking for.

Well I bought the cheapest Shimano 11 speed cassette - a 105. It works perfectly.

In fact it seems smoother than the chorus one
