Hi,
I have a 20 inch folding ebike. It has Kenda Kwest tires (1.5 inch) that are great for smooth roads, but are too stiff for pavement that isn't perfectly smooth. The width of my bike's rims is 20mm. Is it enough for Big Apple (2") or Big Ben (2.15") tires?.

Yes, no problem at all.
Is that 20mm internal or external? If it's external then 2.15" is about your limit, internal and you can go wiser still.Currently riding a Whyte T130C, X0 drivetrain, Magura Trail brakes converted to mixed wheel size (homebuilt wheels) with 140mm Fox 34 Rhythm and RP23 suspension. 12.2Kg.0
