36h Tubular Rims

I have a pair of old Hope Bulb hubs gathering dust in the shed as part of a now pretty vintage downhill rig. I'm thinking about repurposing them into a tubular cyclocross wheelset, but I'm not sure how practical / possible this is. To be honest if I was starting from scratch I'd go for a lower spoke count, I'm not very heavy so would be fine...but I like the idea of reusing these hubs if I can.

Any recommendations for 36h rims suitable for cyclocross? Looked briefly at Mavic Reflex but think they're recommended for much thinner road tyres, not sure if any good for CX. Also just noticed Major Toms come in 36h (though only in machined sidewall which I don't need). Anything else I should look at?

    Never mind, I've hit another stumbling block...forgot I was running 11 speed on my cross bike. Ain't going to be able to fit an 11 speed cassette to the rear freehub :(
