A noob question about headsets

Done everything to my bikes but never touched headsets. I watched a few videos online about servicing them which looks pretty straightforward. The one bit I don't get is that the headset is just taken off by hand and popped back on again.

When and where does one need a headset press as I assumed they were required as part of the process of fitting one? I'm missing a bit of information somewhere.

    They're used to press the bearing cups into the head-tube - I'd assume that some might be a tighter fit than others, and using a press would ensure correct alignment and that the cups are pressed all the way in and seated properly.

    As above. But with more modern headsets the "cups" are no longer the bearing surface for the balls, but just a profiled seat into which a cartridge bearing sits, so less prone to wear as long as properly greased on first assembly.
