I have a pair of Bontrager Aeolus 3 D3 Clinchers which I'm upgrading from 10 speed to 11 speed, so I shall be fitting a new freehub body to accommodate the 11 speed cassette, but my main concern is, which grease is recommended or should be used when greasing the "Star Ratchet System"?

There seems to be a lot of fuss about this, but I used normal bearings grease on the DT 240 and it did work wonders for years

Not clear from the OP if referring to the hubs or the freehub. I'm thinking star ratchet refers to the latter.

I use bog standard grease in wheel bearings (big pot from motor factors years ago) and just clean and repack them annually.

For my Shimano freehubs I periodically pick out the rear seal and drizzle a little light oil in there. I think if you use grease in a freehub you risk gunking it up and having the pawls stick.

I have older Hugi hubs (before DT bought that company I think) and have always used the DT grease on the star ratchets. Too much grease or a thick grease can cause them to not engage, otherwise, I don't think that there's any magic in what kind you use.

My local bike shop which is fitting the new freehub are saying that they will be using "shimano special freehub grease, Better than dt swiss grease" on the star ratchet system, not sure what they mean by "shimano special freehub grease".

They aren't entirely bullshitting you; there is a Shimano special freehub grease. I'd assume it's lower viscocity than the gloop I use in my hub bearings. Whether or not it's any better / worse than the DT Swiss stuff I have no idea.

My Shimano freehub is full of gearbox oil left over from a 1982 Ford Escort.

    as above.
Last time I had a dragging freehub I flushed it through with jizer, then allowed to dry. Repeated with 3 in 1 and work into the mechanism, then finally gear oil. Never heard it run sweeter!
