As the title suggests, when should you replace brake cables and which are the best to replace with?

There's no particular schedule for when a brake cable may need replacing - if the outers are in good condition, the inner could last indefinitely, assuming you are not swapping levers, or frame, etc.

As for replacing, I just buy whatever the LBS has in stock - usually Shimano, Clarkes, or similar..

I only replace stuff when it breaks or stops working; brake cables are no different. Kept the same brake cables on my alu bike for 7 years with just an occasional clean and lube. Only had to replace the rear inner when it frayed during a swap from one bike to another. In that time it's eaten 2 gear cables. On the carbon bike I'm using the cables that came with the second hand groupset.

I generally use the bog standard Shimano outer cables and their stainless inner wires.
