I went to Cyprus over Christmas. There is plenty of hill climbing to be done there The weather in December was a balmy 16-20^C with no significant wind or rain. For those in the UK, the weather was much like September. They drive on the same side as the UK and the road signs are identical.
Christmas day ride was fantastic, the scenery was craggy but inspiring and there were almost no cars on the road. A really good mix of long hill climbs, winding descents and a fast sections on A roads. Downsides were sun down is still 4:30 pm, Garmin standard maps do not cover Cyprus and some of the roads have no asphalt on them
I stayed in Pafos and it was not too difficult to find routes but I think Limasol would have been better because it is closer to the national park areas and when sun down is 4:30 being too far from the action can limit your riding.
