Increasing nuber of gears. New Freehub?

I am upgrading the drivetrain on my Dawes Galaxy. I have a pair of wheels with Shimano STX hubs. The rear takes a 7sp cassette. I would like to change the F/H body for an 8/9/10sp. Is it just a case of changing it and altering the axle spacing and wheel dish?

    If the spacing is alrady 130 mm you just need a freehub body.

    Will an 8/9/10 cassette not touch the frame and need the axle spacers moved from left to right side and then the wheel be off centre?
