I'm thinking about a trip that take in all of the islands where there are significant peaks that are worth cycling up. As far as I know, these are the main ones -
Gran Canaria - Pico de las Nievas
Tenerife - Mt Teide
Lanzarote - ???
Fuerteventura - ???
La Gomera - ???
La Palma - ???
El Hiero - ???
I'm sure there isn't a good climb on every island and maybe more than one on some but I'm looking mainly for the biggest/best climb on each island where there is one.

La Palma has Roque de los Muchachos, perhaps the biggest if them all
The islands also have lots of big climbs that aren't necessarily 'peaks'. Artenara in Gran Canaria, Masca in Tenerife, etc0 -
for Lanzarote I would say Femes.
Not sure if there are any higher ones on the island0 -
Gran Canaria - Valley of the Tears
It's simply brutal climb. Something like Monte Zoncolan and Mortirolo in Italy and Angliru in Spain.
I recommend to go to Gran Canaria. It's the best island for cycling of all Canarian Islands if you prefer climbing.0
