I am looking to change my current 11-25 cassette to a more hill-friendly Ultegra 12-30. Would my existing short cage rear derailleur be able to cope?

I've done it on a couple of set-ups using the SS read derailleur, compact chainset and a Tiagra 12-30 cassette.
Should be no problem assuming as Arthur suggests you get the chain length correct.
You may have to adjust the B-screw a bit to make sure there is enough clearance between the top jockey wheel and the larger sprockets when they are in use.0
