Hi, I'm in the process of building up a new (wet weather) bike. I need a new groupset but I'm uncertain which way to jump, bearing in mind swapping old parts from my summer 10-speed ...

It's not so much between 105, but between 10 and 11 speed in general. The main thing to watch out for is the wheels, you need an 11 speed hub or the cassette won't fit.0

Great, thanks. And that's a good point, as I have mostly Ultegra 10-speed on the old bike.
Just have to decide if I'm going to "future-proof" or "past-proof" myself.0 -

My post was a bit ambiguous... By old bike, I meant summer bike. The new winter bike has nothing yet (besides some 10-speed ex-summer bike wheels), but I was preparing for exchanges in the future.
The 11-speed does look nicer at least, but the wheels are just sitting there. Free of charge, and in perfectly good nick.0
