I have ridden some of the coastal route South of Bordeaux on an offroad path through Pine forests. Quite pleasant but from what I recall (it was 25 years ago) got a bit boring as I saw nothing but pine trees for hours. As long as you are not going in winter if you trip over in France you will land in a campsite. They are less common and more expensive in Spain. I would therefore head for Saint Jean Pied De Port which has a municiple campsite, these are always good value, you can then cross over to Spain.
I've just remembered. There is an Owl shaped hut just outside Bordeaux that you can stay in for free if you book in advance. I was thinking of heading that way some time just to stay in it, I like Owls.
