Quinns Bikes - Custom Build??

Watched the documentary last night hosted by the comedian John Bishop, where he is cycling from Sydney to Cairns up the east coast of Australia.
Was intrigued by the bike he was riding. Couldn't make out the brand but eventually got a shot where I could read "Quinns" on the downtube.
Bit of a Google came up with Quinns cycles in Liverpool and it seemed plausible that John, being a staunch Liverpudlian, would have sourced a bike form his own city. However a look on the Quinns website shows no evidence of a custom build option.
Anyone out there know the origin of the bike he was riding?
