I've got some Ultegra 6800 Tubeless wheels on my summer road bike, do you think I could use them for CX in winter?

I'm thinking of getting new summer wheels and relegating these to CX

    With an inner tube, definitely.

I'm not 100% sure of this, but I *think* on-road tubeless and off-road tubeless are slightly different standards. They're certainly doing very different jobs, the main purpose of off-road tubeless being to enable you to run lower pressures without pinch flatting. I may be wrong, but the very least, do some research if you're hoping to use them tubeless.

No problem, tubeless or otherwise - there aren't any different standard either, provided the tyre bead seals on the rim. Certainly worth running tubeless for CX - anything that allows you to run lower pressures means less chance of punctures and better grip.
Make mine an Italian, with Campagnolo on the side..
