Advice on potential new bike (question amended)

I've edited my question in the hope that it makes it a much more straightforward proposition to answer.
I recently had my Bianchi Camaleonte 3 bike which I bought 10 years ago stolen from me. It was a terrific bike (although some parts of it had been replaced due to wear and tear) and gave a real sense of speed which I very much miss.
I would very much like to replace it with a similar bike and wonder whether you could advise me of a suitable model for about £850.
