Bottom Bracket help

Hi I am going to change my frame to a inbred. I need help and advise for the few things that I have not changed before. I have looked on youtube and understand how to change them but am a little confused as to which type or size I need.
1st Bottom bracket
On my specalised rockhopper it has a Shimano BB-ES25, Octalink spline, cartridge bearings, 68mm x 118mm but although the inbred is a 68mm will i need the 118mm as there are a few sizes for them. I want to take off the front 3 ring set uo and just have the middle ring so it will be a 1 x 9 set up.
2nd Headset
I an not sure of all the different types as there seem to be alot to choose from
Any help or advise would be great

1 if you are using the same cranks then yes. The cranks (not the frame) define axel length in this case.
2 Read park tools and ID what headsets both frames use."Do not follow where the path may lead, Go instead where there is no path, and Leave a Trail."
