Information for cycling around Carcassonne

Just wondering if anyone had any experience or information for road biking around Carcassonne.
Better half wants to go somewhere different than the families place and as I've never been to this region of France thought I may try it, want to take the bike so I can do something beyond sit in the sun and read (though I do like that as well)

Yes we did a little tour starting and finishing in Carcassonne.
IIRC Carcassonne, Mirepoix, Puivert, Belcaire, Quillan, Galamus Gorge, Queribus Castle, Sougraine, Limoux, Carcassonne.
The Plateau de Sault (Belcaire) is a beautiful area on the edge of the Pyrenees.0
