Suggestions for winter touring?

Im considering taking a month or two off from work in Winter. Never done extended cycle touring (done the usual ctc, some longer Sustrans national cycle route stuff) but have got quite a bit of experience of solo trekking/hiking and I regularly cycle with my road bike.
Due to looking at January/February im considering Southern Hemisphere and looking for at least a 2 week cycle, but have flexibility to go up to 4 weeks. Obvious one seems to be the Carretera Austral and does appeal to me.
Id be going solo so any recommendations welcome.
Havent bought a touring bike yet, but looking at a Genesis Croix de fer with a rear rack only as I like to travel quite light.
