Anyone for a weeks lightweight touring trip in July/August??

I've always liked the idea of doing some touring but put off the fully loaded touring bike style! Now I see so many riders doing it on race bikes with a large saddle bag or similar, and minimal kit. My idea is to travel light in this way and stay in hostels etc. Thinking somewhere in Northern Europe and easy to get to as the destination. I'm 30 and very fit and as I can pretty much go at any time. Wondered if there might be someone in a similar situation or thought about something like this up for joining me!
