Yorkshire Dales for novice riders

My girlfriend managed to get a place in the Ride London-Surrey in August this year, having only just started cycling in the last few months. We're driving up to her parents' place in Bedale for 4-5 days this weekend and I suggested we take the bikes. Whilst I'm keen to get out and do the bigger climbs (buttertubs etc), I probably won't get far trying to get her to do the same - she managed her first 50 miler at the weekend (it had 500-600m climbing) and was suffering with cramp for a few days.
Can anyone suggest and routes starting in the Bedale area that will hopefully push her slightly out of her comfort zone, but won't be completely up achievable for her?

Should you fancy it there is the Richmond Cyclosportive on this Saturday, which includes a 3-dale 60 mile route. Might be right up your street?

Various short and long here, flatish if you stay in vale of York, hillier if you go over Osmotherly way, lots of great, quiet roads, enjoy
