What is the difference between DOT fluid and Mineral oil?

Hello,
I'm new to disc brakes on Mountain bikes and have acquired a mountain bike with Clarks Clim8 6 pot disc brakes. How do I know which fluid, that is already been used in it? Is there a distinctive difference between DOT fluid and Mineral oil?

Dot is higher spec (heat wise) but more volatile - rots your paint, skin, seals, and absorbs water. Mineral is nice and friendly.... You cant mix them. Google says (from a few MTBR posts) mineral oil.A Flock of Birds
