I'm trying to find a Avid 185mm post mount so that I can fit my Elixir 1s to my new forks, but I can't find 1 anywhere! Would any other post mount do the job?

If it's the right size for your rotors, yes.
But 185 is a bit of an Avid size so assuming PM to PM
