i need new brakes because my current brakes aren't able to open wide enough for my 27mm wide wheels. Will ultegra 6800 brakes be able to hold my 27mm wide tubulars?

27mm wide tubular rim - probably not. If you don't mind me asking why a 27mm tubular rim you will need 30mm tyres on that that pretty much CX width. Tubular rims do not need to be that wide. I am not sure which brakes take rims that wide.

Justin, normally these are toroidal carbon rims and the widest part is not the one in contact with the pads... I would assume the brake track width to be somewhere around 25 mm, which should be within reach of any caliper

the 303s are wider, at 26.45mm at brake track

the new HED stingers are even wider - 28mm at the brake track iirc
