....but not when you ride the bike?

I've even had this problem after having bikes fixed by very good shops. Can understand fiddly things like gear adjustments due to not having as much pedal pressure on them but why oh why, for example, doesn't my cadence sensor detect anything when I ride the bike but works perfectly on the stand?

aside from something flexing and moving the sensor away from the magnet...

on the stand there's mostly just air between sensor and computer on the bars

when you're on the bike, the signal has to get through you too, ant+ is in the same range as most microwave ovens, i.e. the range absorbed by meat

could be worth trying a new battery
my bike - faster than god's and twice as shiny

I changed all of the batteries. I think you're right. Unfortunately my frame's an awkward shape which means that getting the sensor closer to the handlebars would be very difficult.
