I'm in the process of changing my dad's bike from a double to triple set up.

The original had a 53-39 and 11-26.

I'm trying to set it up with a triple which has a 50 big ring and using a 12-28 cassette.

Do I need to use a shorter chain length for this??

Probably not, however I'd check the chain length against shimano tech doc instructions or something similar.

No, I'd say the bigger largest sprocket / smaller largest chainring will cancel each other out.

You may need a rear mech with a bigger capacity though
