Am I right in thinking I just put the chain on the biggest rings front and rear and remove the rear shock to get the bike to the end of it's travel and go from there? I can't measure against my old chain as it snagged on something when I crashed. I lost about a quarter of it somewhere and can't find it

    Well almost.

You need to check against the point that you have most chain grow.

This May or not be at max travel.

Oh yeah I get what you're saying. It could be somewhere else in the travel range depending how the rear suspension pivots.

You might not have to remove the shock if your lucky, if its an air shock let all the air out and it should be able to fully compress it or if its a coil sometimes undoing the preload collars can give enough free space on the coil to compress the shock (not always, tends to be more on longer travel shocks)
