If possible, I'd like to upgrade the Suntour XCM-DS26 - 120mm forks on my Carrera Carrera Centos Limited Edition 2013. It would be interesting to see what a good set of forks could do to this bike. Any suggestions?

It depends on budget and steerer size I guess..

If you have a 1.5 inch steerer these would be a good option.

    1 1/8th inch

    Tapered steerer..

I would guess almost any air fork would be an improvement....

I just got a set of brand new Suntour Epicons from a UK seller on Ebay, to put on my Carrera Kraken. They get stock in regularly and they're only £135 (in black or white). I got mine for £121.50 'cos Ebay had sent me a 10% discount voucher code. Air fork, ally stanchions, ally steerer, magnesium lowers. I weighed mine at 1660g (with uncut steerer), so they'll be a whole heap lighter than your XCM, and much more controlled. They come as 100mm travel, but you can convert them to 80, 100, 120 or 140mm (simple job, I swapped mine to 120mm this evening). Assuming your Centos is a straight 1 1/8" steerer, that is.
