Peak district and New forest are two ends of the spectrum. Peaks is generally very hilly and hard, New forest is flat and easy.

If you are going to the peaks, then basing around Hope is a good idea, or anywhere in the hope valley generally.

If you are going to the new forest, Lyndhurst or Brockenhurst are the main two areas, but to be honest the new forest is easy enough to be anywhere really.

Both areas are the kind of biking best suited to those who knowhow to use an OS map.

Afan lodge. Rideable to both Afan trail centers. Nice place, good rooms, bar, decent food. Well worth a visit. Ignore the website if it says they're full, just email or call them.

Round hope is the first place we did proper off road riding. It is hilly , very rough in places but you will soon get into it.
