I have the GTC Race and swapped the stock calipers for the Ultegra BR6700 calipers and noticed the difference. They also look alot nicer!. I bought them from JE James for about £40 in a sale they had on.Trainer Road Blog: https://hitthesweetspot.home.blog/

i think the 6800 is dual pivot, which apparentley makes quite a difference! the 105 calipers are better than what i have on at the moment, so i may take the plunge:)0

BR451 are dual pivot too, but they are a 57mm drop brake. 6800 is a standard 49mm drop brake, so there is a good chance that the brakes wouldn't fit on your frame.
In my experinece the main difference in brakes is the pads and the shoes. Buy yourself some koolstop salmon pads in cartridge holders and you will find a world of difference in your existing brakes. If you have difficulty finding the koolstop with metal cartridges then you could try ultegra or simlar ones as Shimano pads are pretty good but can be a bit aggressive

For some reason it is widely thought that R561s are long drop. They aren't, they're 49mm - 6800s will be fine and you'll notice not only an improvement from the improved pivot system the 6800s have but also the fact you'll now have the correct pull ratio brakes for your 5700 STIs.2012 Cube Agree GTC0 -
my agree has Di2, will that make any difference?0

Not that I'm aware. Pretty sure all recent 105, Ultegra and Dura Ace groups have the same pull ratio.2012 Cube Agree GTC0
