Mc Cain do a chip called "Ultimate chips" their only avaliable to resturants (Malta Inn in Kent does them) their triple cooked and they are simply amazing.....far easier then cooking them yourself0

Triple cooked chips are incredibly tasty but rarely worth the effort.
Any good quality chipping potato cooked in dripping is still delicious.You only need two tools: WD40 and Duck Tape.
If it doesn't move and should, use the WD40.
If it shouldn't move and does, use the tape.0 -

Never really been convinced of the triple cooking process.Best results are in my kitchen achieved by using potatoes under the trade name of Lovers potatoes,basically grown specifically for chips,blanch in rapeseed oil at 140 degrees until just soft.
Allow to cool then chill.
Deep fry in beef dripping at 190 degrees until golden.
Have tried over 20 varieties in the last 12 months to perfect them.

Slimming World chips; cut chunky from white floury potatoes, par boil for 5 mins so still firm, drizzle sunflower oil and bake on gas mk9 for 30mins.
Or, deep fried from chip shop.
In either case, lots of salt, lots of vinegar.0 -

I do enjoy a good deep fried chip but these days they're a rare treat. Instead I too go for the healthy chip option, cut 'em chunky, par boil for 5, pop them on a baking tray, spray with Fry Light and stick them in the oven for 30 mins. Salt, vinegar, serve. Granted they're not as tasty as a proper chip, but it is a lot easier to ride up hills afterwards.

good frites are the best
limp, grease laden, tough, non-crispy exterior, non-fluffy interior, i.e. british standard chips, are an abomination against all that is right and propermy bike - faster than god's and twice as shiny0 -
I like the Chick pea, especially when it is wet. However, the red one's are quite decorative. What I don't like is acres of the stuff when people have got rid of their lawns. It makes their houses look like funeral parlours.seanoconn - gruagach craic!0

Crispy chips are gross - just wrong, wrong, wrong
Chips should be light golden, rigid enough to 'stand' horizontally (eh?) and yet soft enough to bite through without a crunch, and should always have vinegar and salt. Mushy peas, gravy, tomato ketchup - whatever. Even Mayo OK.
It's just a hill. Get over it.0
