How to replace rear axle/hub to make old wheels 11 speed

I have a relatively basic set of road wheels that came with my Ribble Gran Fondo. The rear wheel is 10 speed compatible at the moment. I have just bought a Dura Ace group set. This will be compatible with my new Dura Ace wheels, but I'd like to still use my old wheels for commuting.

I see that you can buy an 11 speed Dura Ace axle/hub. Is it doable to take my old wheel to pieces, and re-hub with this Dura Ace one. As long as the new hub takes the same amount of spokes will this work?
