Trimming. Please help me understand

I understand the concept of trimming to prevent chain rub in cross gears. However, I got my 4 week service today and now I have to trim one way when in small front ring and big rear cog and the other way when in small front ring and smaller rear cogs. Then, if I move up to front big ring, even if that move was from a no trim required position, when I move back to small front ring I have to trim again
What perplexes me is that none of this trimming was required BEFORE the service
My LBS tells me this is all normal and the better place I was in before th service is not normal. Any thoughts on what I should expect gratefully received
