I ride a MTB but am wanting to get a single speed for my city commutes. I have been researching online and to be honest, I dont know very much about bikes in terms of what are good parts and how much i should realistically be paying for a decent entry level single speed. I have seen a host of websites offering services where you can design your single speed with all kinds of colours for around £300, but what are the quality of such products? I want something semi attractive that i can educate myself properly on maintenance and get used to single speed riding. Any advice on realistic budgets and any particular makes/models i should steer clear of?

any advice and guidance is greatly appreciated, thank you

The 'Create' type singlespeeds are cheap nasty tat.
SE Racing are decent quality for about that price, next level up would be spending a little bit more and getting something like a Dolan FXE, One One Pompino or Tifosi CK10.
If you want to learn about bike maintanence why not buy a frameset and build the rest yourself? No easier job than putting a singlespeed or fixie together, no special tools required.

If you just want something basic that'll get your around I would just get one of these

If your planning on doing a bit more mileage or using it for training then something like this would suit, major upgrades being alu frame, carbon forks, sealed hubs, drop bars and lighter finishing kit

    Depends what you want.
