Rack and panniers for a Dolan Preffisio

Apologies if this is a stupid question :oops: but I want to put a rack and pannier on my Dolan Preffisio winter bike, and I'm totally lost by what may or may not fit. I did use the search function but got some results saying panniers wouldn't fit as my heels would touch the back of the bag, others saying anthing will probably fit? I'd rather have side mounted bags so it doesn't effect my rear lights. I don't need something full touring spec, just enough for weekend basics, ie a change of shoes, clothes, washbag and tools. No more than what you'd put in a backpack, but I really hate wearing a backpack for any longer than my commute.
