Best tyres for muddy fields?

I'm building up a cross bike using an old frame I've had laying around for a while (see my sig).
I'm really stuck with what to do with the tyres. What is good for fairly muddy areas?

Use latex tubes and run them at the lowest possible pressure without bottoming-out on the rim -Make mine an Italian, with Campagnolo on the side..0

They were amazing last season which was incredibly mucky. With some very judicious pressure selecting I could push them very hard.
Be warned, if you're riding on soft grippy ground they ride really heavy and you'll go slow and get tired doing do - there are better options for that. But if you're not racing they're great.
