Giant Defy 1 - Wheel Upgrade

Hi
I have a 2012 Defy 1 and I want to upgrade the wheels as the although the stock ones I have are bulletproof they are a little heavy. The stock rims are the giant P-R2.
Now the bike only cost me under $1500 so I don't want to break the bank, what do people recommend?
I've been looking at:
Mavic Aksium S
Mavic Ksyrium Equipe S
Fulcrum Racing 3 & 5
Budget is 500 bucks tops!

But there are many persuasive arguments to going handbuilt route too. I'm certainly going to give that serious consideration next time around. Tons of threads on here to search.
