Recommend Me a New Bike

Hello All
So, I am considering getting myself a better bike. I've been riding around on a Trek 7100 hybrid that I inherited from an emigrating friend for the past year doing 40/50 miles every weekend and, having enjoyed it, fancy getting something a bit more suitable as I'm planning on upping my mileage. My budget isn't huge due to a new arrival but I'm looking for something nice to ride on the road for £700ish or less. (I appreciate I'll need to get extras like peddles etc outside of that)
Anybody got any recommendations? Also, as this will be my first-time buying a bike myself, any places (other than the obvious Wiggle/Evans etc) where it might be worth looking?
