My google fu seems to be failing miserably here, I'm thiking of changing my son's bike to 1x8 (as on the islabikes) but I can't find a 24" wheel with a free hub suitable for a cassette.
Does such a thing exist, or would I have to build one up?

I don't know, but if you end up getting stuck with a freewheel, I know you can get a wide-ratio 8 speed one for next to nothing here:
