8 SPEED ON A 7 SPEED FREEHUB

Sheldon Brown (whom God preserve) says that removing one sprocket from a 9 speed block will do the trick. Does that mean that the highest gear has to be 11 or 12T in order to have a lock-ring that fits?

    All correct.
    You'll need a 12T lockring which should fit both 12T and 13T sprockets.

    I've done something similar recently with a 10sp cassette and 7sp STX-RC hub. No problems whatsoever.
