I've been looking at the DMR and Gusset conversion kits, but I notice they say that its only suitable for 8/9 speed hubs but mine is a 7 speed. Is there any way the kits could work with my 7speed rear wheel?

Nope. Unless it has a 8/9/10 speed freehub body and running a 4.5mm spacer for your 7 speed cassette.0

What hub do you have? Is it a screw on type of cogset, or a cassette type?0

My current casset is 11-28T0

That would be make it a freehub, so depends whether it's a 7 or 8(9) speed freehub.
One alternative is leave as is and just don't change gear.I don't do smileys.

I'm guessing its a 7 because when I changed the casset on a service there was no spacers evident.0

You already have a cog (on the cassette), and spacers (the rest of the cogs). You will need a tensioner, which you already have (the mech) so just use the limit screws to hold it on one cog and see if single speed is what you really want.I don't do smileys.

If it is, remove a chainring or two, the shifters, limit the front mech to work as a guide and voila, ghetto SSI don't do smileys.

Will do, but this is the direction I want to take. So back on the conversion kits I'm guessing I'm going to have to find one suitable for 7 speed hub.0

You could make one up using cassette spacers and a cog - it is just the the spacers with the DMR kit are too big.

Yes you can make it work. A2Z ad Mr control supply kits with sperate spacer. Remove 6mm of spacer and add 1.5mm (wheels manufacturing make these) and that is 4.5mm of spacers removed which is what you need to make it fit.
Also the Mr. Control kits come in 14-18T cogs opening the possibility of a tensioner less setup, something I used with sucess in the past.
