Having recently forked out for a bike fitting, i now need to get a shorter stem and also a seat post with an amount of lay back. The bike is full carbon so alu parts would look out of place. Any suggestions without breaking the bank?

Carbon stems are really terrible value for money - I'd strongly recommend you find yourself a seatpost you're happy with - Easton, 3T, FSA all do some nice ones with a bit of layback for you, and then get an alu stem from the same brand, to match up if you're bothered about aesthetics.
