You don't need a suspension fork and knobbly tyres unless you're riding red grade MTB (heavy) trails so maybe something like the Voodoo Marasa or Carrera Subway.
I used to just ride my bike to work but now I find myself going out looking for bigger and bigger hills.

More than likely you would have had sore wrists after 50 miles on any flat barred bike, suspension or not. One of the worst things you can have is bad suspension forks, you get hammered by the rebound if the damping's not good enough and the extra weight is a real pain.

Subway is a solid bike, but if you're really after a MTB, try a Rockrider 5.3 from Decathlon.
    Disc Trucker
    Kona Ute
    Rockrider 8.1
    Evil Resident
    Day 01 Disc
    Viking Derwent Tandem
    Planet X London Road

That's more likely due to using a flat bar for that sort of distance rather than drops. Flat bar locks your hands in one position the whole time, on drops you have half a dozen different positions. But your price range limits what you can get with drops to the likes of the Carrera TDF or maybe the Virtuoso. Check they can take 28mm or bigger tyres for mild off road use.
