Recently got a defy 0, which I'm very happy with. Save for the breaks. Which are Br-561.
Has anyone got the ultegra breaks. What do you think. Any comment is it worth the upgrade.
If so how would you sum up the difference.

Doesn't the Defy have long drop calipers? If so, make sure you get the right size if you do go down the replacement route. The Shimano long drop brakes tend to be numbered rather than in "named" ranges, if that makes sense. I think the BR-561 is equivalent level to 105.
FWIW, in your shoes, I'd probably try different pads first before changing out the whole brakes. I like KoolStops - black is the go-to compound and very grippy for majority of riding. Will probably wear a little quick than the stock Shimano blocks in there, but gives good feel at the lever. I use br650's , they are long drop sometimes called the Ultegra equivalent, with KoolStop Salmons and am happy with them, plenty of power very controllable, that is until it rains then straight back to the dark ages.0
