Road biking & hire around Florence

Hi-I will be in Fiesole just outside Florence in July for several days. I would like to hire a road bike and do a couple of 1 day excursions. Does anybody know if this is possible and also whether there are any 1 day guided trips available? So far I can only see leisure type trips on hybrids-would prefer something a bit more demanding. thanks.
