Wales / Cardiff / Racing Bike

Last year, I have spent a few days in Cardiff and had a good time, looking at red dragons, ancient castles, Doctor Who, eating pies and fish and chips (hardly available in Hamburg/Germany), and I saw a lot of people riding racing bikes. So I decided, it could be Wales by bike this summer. Probably not a round-trip, but find a nice place to start daily tours from, also a bit of sight-seeing, I will have up to 10 days. So I need ideas and recommendations please.
