New rim replacement?(one for the wheel builders?)

Hi, i have a set of wheels which i used to use in my DH days. They are good hubs but the rims are very heavy for what i ride now(Enduro/trail), can i lace a similar but lighter rim onto the hubs or am i going to need new spokes and nipples etc?
The rims are Mavic EX729 and i was thinking of replacing them with either a Mavic EN321/351. I cant seem to find any info on the rim profiles which is the dealbreaker right?
Any advice would be much appreciated
