I'm looking to build up a racey 29er - currently considering the On One Carbon Race and pondering fork choice. Primarily this will be for XC and the odd race.
Looking at these options...

So the questions I have other than the obvious what is the best...
Will a bolt through over QR make much of a difference given that it's short travel.
The bike will take "upto" 100mm of fork. But what would work better with such geometry? 100mm or 80mm?

I have the very same...
Lovely bike, I have XX WC forks on mine 100 mm travel and the thing flies, not tried it with 80mm - It rides 'on rails' as it is, stem slammed, flat bars weighs a touch over 20lb.
I like the maxle feels nice and rigid, I have the QR rebas on my Scandal 29er the maxle feels more direct IMO, its not a game changer - just feels better.0
