Ultralight Mountain Bike Traverse of Alps

I am planning a 3-4 week ultralight mountain bike traverse of the European Alps from Innsbruck to Geneva or thereabouts, riding as much technical singletrack and as many high passes as possible (and as little road as possible). Does anyone know:

Is it legal to ride trails in Austria/Switzerland/France, or must one stay on specific mountain bike trails/roads/tracks?

Has anyone done a similar route? Is there a recognized trail? Are there any books on the subject?

What would be the best map series to use?

I am planning to ride a Gary Fisher Hoo Koo e Koo and carry the bare minimum gear (ultralight bivvy tent, lightweight stove etc), any thoughts on choice of bike/gear?

What is the best way to carry gear? I have been looking at frame packs with the hope of still being able to ride technical stuff without worrying about cumbersome panniers. I have emailed this manufacturer: http://www.carouseldesignworks.com/ - does anybody know of others that do similar things?

Is wild camping acceptable in the high mountains of these countries?
